So last Saturday we had a charity bike run to raise money for the American Brain Tumor Association. This is the third year that I've done all the food for this event. This year I cooked for 600 people.
On the menu was pulled pork, chopped brisket, penne pasta with meatballs and sauce, salt potatoes, Grizz's smoked green beans with mushroom cheese sauce, bbq beans, and cole slaw.
It was buffet style and I had some girls serving at the line. It was the typical set up with the sides served first and the meats served at the end of the line. I told the girl that was serving the meats what I wanted her to do. 4 ounces of pork and 4 ounces or beef, no substitutions. I didn't want people to hog up all the beef and leave me with leftover pork and some people not getting any brisket at all.
I made the penne pasta right there on site and after I made it I still had a 7 gallon bucket about 1/3rd full that had leftover homemade sauce in it. I had it under the buffet table at the end of the line. I served no bbq sauce with this meal. There were some that asked for sauce and the girl in turn said we didn't have any. "What's in that bucket down there?" one asked. "That's leftover spaghetti sauce" she said.
"Put it on there anyway" he said back! Then the next guy, same thing. And the next and on and on.
The brisket I did for this event turned out really good. And there were many who ruined it by putting spaghetti sauce on it.
What a slap in the face.
